The 2026 Hamptons season is heating up. From Sag Harbor to Montauk, new restaurants, pubs, and hotels are opening, and the insiders will want to get a jumpstart on booking tables. Here’s everything you need to know—and where to make a reservation first.


Babe’s Diner — Sag Harbor, the former Nikki’s Not Dogs stand at 51 Division St., Babe’s Diner brings a “finer diner” concept: family-friendly by day, Supper Club by night.

Camp Rubirosa — East Hampton (Returning + Here to Stay)

After a sold-out pop-up last summer, Camp Rubirosa is now a permanent seasonal fixture. Communal tables, an outdoor bar, and Sunday Suppers bring the Mulberry Street vibe to Race Lane—without the city hustle.

SPARK TAKE: From pop-up hit to summer institution, this is East Hampton dining with community at the center, and a good spot to hit once you hop of the Cannonball.

Lion’s Nook Bar & Grill — East Hampton (Opening Early Summer)

Taking over 10 Main St. in Parrish Mews, the former O’Malley’s and Rowdy Hall space will welcome Lion’s Nook Bar & Grill, a new concept from Parioli Hospitality, the team behind Springs Tavern & Grill.

Miracle — Sag Harbor (Opening Early May)

Miracle marks a homecoming for Sag Harbor native Michael Nolan, taking over the former Vin Sur Vingt space. The latest from the co-founder of Fresno in East Hampton and Miracle Bar and Grill in Manhattan, the restaurant promises polished modern American cuisine in a community-focused setting.

Barlume Beach — Montauk (Opening This Summer)

Montauk’s waterfront gets a lifestyle upgrade with Barlume Beach by LDV Hospitality. Chef Francesco Battisti brings Mediterranean flavors and all-day dining to a 40,000 sq. ft. waterfront venue designed for day-to-night flow. La Dolce Vita meets The End.

SPARK TAKE: Montauk is moving upmarket, and Barlume Beach is the clearest signal yet.


Blue Flag Hotels — Across the East End (Summer 2026)

Blue Flag Capital expands into the Hamptons with:

  • Faraway Sag Harbor — Sag Harbor (Baron’s Cove reimagined, 67-room coastal compound)
  • Hotel Corduroy — Montauk (high-design beachside retreat)
  • Oyster Estate — Greenport (nautical-inspired boutique hotel – late summer)

SPARK TAKE: The Hamptons hotel scene is getting a high-design reboot. Book early.


Jean’s — Sagaponack (Coming 2027)

Jean’s takes over the iconic Old Stove Pub. Max Chodorow and Ashwin Deshmukh lead operations, backed by veteran Jeffrey Chodorow. Expect a scene-first, fashion-leaning dining experience.

SPARK TAKE: A legacy steakhouse address trades longtime regulars for a new, trend-forward crowd. Could be worth the wait.
