“Snow Day? Meredith Vieira’s Apple Pie Is Ridiculously Easy and Delicious

A family recipe passed down by Meredith Vieira’s mother Elsie is a winner.

I love to cook, but I’m not a baker. All that measuring and precision makes me nervous. So when Meredith Vieira (my former TV boss) reminded me recently that her mother Elsie’s apple pie recipe was the best apple pie I would ever make or eat, I gave her the side-eye. And then I asked for the recipe.

The one time I did try making an apple pie from scratch, the recipe called for so much sugar I had to throw it out.

Meredith’s mother’s recipe takes the cake. Okay, the pie. Truth. So good! (and I’m not one to use exclamation marks lightly).

I made Elsie’s apple pie recipe for the holidays with my 12-year-old daughter, Ava (see video on Instagram @SparkHamptons). Not only was it delicious, it was so simple (well, my daughter peeled all six apples, so to me it was simple).

Seriously, we actually made it again, two weeks later, just to make sure it wasn’t beginner’s luck. It wasn’t.

Below is Meredith’s mom’s recipe (thanks, Meredith, for sharing with SPARK).

Note: We used a two-pack, store-bought crust (remember, simple). The second time, I used the deeper dish pie crusts, and that worked better in folding and closing up the pie.

ELSIE’S APPLE PIE RECIPE  (courtesy of Meredith Vieira)

Choose whatever pie crust works for you and place one in a 9-inch pie plate.

Brush bottom crust with beaten egg white.

Cut up six medium-sized apples (I prefer Macintosh and Granny Smith) and place them on top of crust.

Mix ½ cup of sugar with one teaspoon of apple pie spice and sprinkle over apples.

Place one pat of butter cut up into four pieces on top of apples.

Place top crust on and coat with a thin layer of egg yolk and milk.

Cut four slits into crust to release steam as the pie cooks.

Place in 425 degree oven for 40 to 45 minutes. Crust should be golden brown.

Let cool.

If you think you have a better, simpler apple pie recipe, please write to me and I’ll share it with Meredith. It won’t get you far, though. (She told Martha Stewart during the apple pie bakeoff on TODAY that her mother Elsie’s recipe was better than Martha’s. Imagine that conversation.)

Bottom line: There is nothing better on a cold winter day than a slice of freshly baked homemade apple pie (and maybe a little whipped cream on it).
